疏水作用分子式:CAS号:性质:又称为憎水作用,冰山结构(iceberg structure)。在某些大离子的水溶液中,如四级烷基铵盐及肥皂的水溶液中,离子的电荷中心上的功能团与水分子相互作用的倾向,小于水分子之间相互作用时,出现疏水作用。此作用可分为两种情况。在无限稀释水溶液中,溶质与水之间的疏水作用为本征疏水相互作用,亦称为负水化。在一定浓度的水溶液中,两个或两个以上疏水溶质分子之间相互作用,发生溶质粒子的缔合,从而影响溶液的热力学性质,也为疏水作用。此作用对水溶液表面吸附、胶体电解质胶团形成以上溶液中蛋白质的构象都起着关键作用。
