天然表面活性剂分子式：CAS号：性质：指具有表面活性的天然物或其衍生物。由天然物的衍生物制得的表面活性剂在分类上与合成表面活性剂有明显区别。根据天然物的加工度可分成四类：(1)存在于自然界中的表面活性剂，如卵磷脂；(2)由天然物分解产物制得的表面活性剂，如肥皂、蛋白系表面活性剂；(3)由天然物制得的表面活性剂，如山梨糖醇酐脂肪酸酯、蔗糖脂肪酸酯；(4)天然物经化学改性制得的表面活性剂，如山梨糖醇酐脂肪酸酯与烷基环氧化物的加成物。与合成表面活性剂相比较，其洗净力、浸透力、分散力、乳化力以及起泡力等表面活性较小，但毒性低，生物降解性好。特别是近年来合成表面活性剂造成环境污染及对人体的毒害等问题，致使天然表面活性剂用量激增。主要用作以食品、化妆品、医药品为中心的乳化剂、润湿剂、分散剂及洗净剂等。
