【番茄土豆炖牛腩】用料 番茄2只土豆1个牛腩500g黄洋葱适量京葱适量姜蒜适量八角1颗香叶2片生抽1勺白胡椒粉少许番茄酱2勺冰糖少许盐适量【番茄土豆炖牛腩】的做法
500g牛腩肉洗净切块，放入冷水锅，加京葱段和姜片，大火焯水后洗去浮沫，备用。
热锅冷油，放入京葱圈、洋葱末、蒜片、1颗八角和2片香叶炒出香味，下焯好水的牛腩肉，中火翻炒均匀。
倒入炖锅，加清水没过牛腩肉，大火煮沸后，转小火炖煮1小时左右，至牛腩肉炖软时，八角和香叶弃用。
2只番茄顶部划十字刀，放入锅中，从顶部淋上沸水，再小火煮约30秒取出，撕去表皮后切块；1个土豆洗净去皮，切块备用。
热锅热油，倒入番茄块煸炒，炒出红油后加2勺番茄酱炒匀，再加入土豆块翻炒均匀。
牛腩肉已炖软时，将煸炒好的番茄和土豆连带炒出的红油一同倒入炖锅，加清水没过所有食材。大火煮沸后，加1勺生抽、适量盐、少许白胡椒粉和冰糖调味。
转小火炖煮30分钟，盛出撒上少许葱花，番茄土豆炖牛腩完成！
