氮素代谢氮素代谢 nitrogen metabolism氮素及含氮的活体物质的同化、异化和排泄,总称为氮素代谢。植物一般吸收氨盐或硝酸盐等无机氮化合物,硝酸盐要一经被还原为氨盐或至与氨盐有关的阶段之后,便用于氨基酸和蛋白质的合成。相反,动物只能用氨基酸或蛋白质等有机氮化合物作为氮源,否则就不能利用。动物以体内吸收的氨基酸等为素材,合成本身固有的蛋白质。这种把外界的氮素成分变成生物体的构成物质的过程,称为氮素同化。可是对植物来说,正像叶面喷洒尿素所看到的那样,它们并不是没有利用有机氮的能力。细菌等大部分微生物也能利用化合态氮素,但也有的能固定游离氮素。植物把硝酸盐还原成为氨盐过程的最初阶段,是靠硝酸还原酶的作用。a.nason和h.j.evans等人已经阐明这种酶含有mo和fad。这种酶在真菌类(链孢霉等)中也有所发现。可是在这些真菌类的硝酸还原中却存在有另外一种机制,硝酸还原的生理意义,除了作为蛋白质的合成途径外,还起着一种无氧呼吸(硝酸呼吸,即以硝酸代替氧,形成末端电子受体)的作用。有些细菌并不把硝酸还原成为氨以氮素形态释放出来,而是表现脱氮作用,另外,同样在土壤中,有些细菌也能把氨盐或亚硝酸盐氧化成为硝酸盐而进行硝化作用(硝化细菌)。由氨到氨基酸的合成途径是由谷氨酸脱氢酶把氨与α-酮戊二酸进行还原而生成谷氨酸。一般认为这是由氨到氨基酸生成的主要途径,由谷氨酰胺合成酶与谷氨酸合成酶把氨合成为谷氨酸的生成途径也已经明确。如进而在生成的谷氨酸与丙酮酸间进行氨基转移,就可生成各种氨基酸。另一方面,氨基酸在生物体内也因受到水解和氧化还原所进行的脱氨基反应而被分解。某些厌氧性细菌就能在两种氨基酸之间进行相互的氧化还原(stickland′s reaction)。细菌尤其是腐败细菌能使氨基酸脱羧而生成胺。氨基酸因脱氨基分解生成的氨,在植物以谷氨酰胺或天冬酰氨的形态积存于体内,动物则以氨或转化成为尿酸、尿素排出体外。
